Today I bring you a tried and true favorite from my childhood. Even the non-cook can make these. Every Christmas my mom and her best friend got together and made oodles and oodles of these scrumptious little nibbles. What is this delicacy I hold in such high regard? Sausage balls of course. Our moms would throw all the ingredients in a bowl, put it and some baking sheets down on the kitchen floor and tell us to start mixing. The fun here is that you have to do it with your hands. We would squish and mush till our arms hurt. Then we got to work rolling little balls and dropping them on the cookie sheets. Without further ado, the recipe.
2 cups Bisquick
2 cups shredded cheese (I like sharp cheddar)
1 lb. hot sausage (breakfast variety)
1 cup water
Mix all ingredients in a large bowl. Roll into small balls. Bake at 350 for approximately 15 minutes.
That’s it! Seriously. I’ll be thrilled when Pumpkin is old enough to do the work for me – er, I mean enjoy the fun in the kitchen. IF for some strange reason they’re not all gone in one sitting or you made five batches (I made a double batch to feed our friends during our little weekend getaway starting tomorrow!), then refrigerate them. They can be eaten cold, but they’re much yummier if you pop them into the microwave for a few seconds.
